Cotton Candy Cake

Whimsical Cloud of Sweetness

Ingredients:

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup cotton candy, chopped (plus more for garnish)
  • Pink and blue food coloring

Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pink and blue food coloring to match the cake layers

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually add flour mixture to butter mixture, alternating with milk, beginning and ending with flour mixture. Stir in chopped cotton candy.
  5. Divide batter evenly between prepared pans. Tint one batter pink and the other blue with food coloring. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. For the frosting, beat butter until creamy. Gradually add powdered sugar, milk, and vanilla, beating until smooth. Divide frosting into two bowls and tint one pink and the other blue.
  7. Once cakes are cool, frost and stack them, using pink and blue frosting to create a marbled effect. Garnish with cotton candy.
