Zesty Lemon-Blueberry Bliss Squares

Ingredients:

  • For the crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/3 cup sugar
    • 6 tablespoons unsalted butter, melted
  • For the filling:
    • 16 oz cream cheese, softened
    • 2 eggs
    • 1/2 cup sugar
    • 1 tablespoon lemon zest
    • 1/4 cup lemon juice
    • 1 teaspoon vanilla extract
    • 1 cup fresh blueberries

Directions:

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides to lift the finished bars out easily.
  2. Make the crust: Mix graham cracker crumbs, sugar, and melted butter until well combined. Press evenly into the bottom of the prepared pan. Bake for 8 minutes. Remove from oven and cool slightly.
  3. Prepare the filling: Beat cream cheese, eggs, sugar, lemon zest, lemon juice, and vanilla extract in a large bowl until smooth and creamy. Gently fold in blueberries. Pour over the prepared crust.
  4. Bake for 35-40 minutes, or until the filling is set but slightly jiggly in the center. Cool to room temperature, then refrigerate for at least 3 hours.
  5. Cut into bars and serve chilled.
